Vanilla on Vanilla - Cupcakes for a wedding.

Allow me to confess a little something on my second post, would you?

Here it goes.

"I am terrible at blogging.".

There, I've said it.

Sometimes I click on the "New Post" button on the blogger function with much enthusiastic, full of excitement, with trains of thoughts in my head speeding at full throttle and risking head on collision! However when I'm faced with the fresh new blank page on front of me - the trains will just jam brake and send all the passengers into evacuation mode.

While there are times when words and thoughts flow so smoothly, and I can pen one or two good essays just as freely like a water stream.

Then, for times when I encounter the first scenario in the middle of the second scenario, I create the third scenario where I would just have the whole post come into an abrupt stop.

For all those times, I seek your kind understanding and I'll pray hard that any beautiful/pleasant enough looking photographs posted up will help appease any roller coaster you've just been on.

I was honoured to be asked by a friend to provide some of my bakes as morning refreshments at his wedding ceremony, last Saturday.

We met up during an annual gathering for dinner& drinks, updating one and another on our current happenings. I was sharing my joy and happiness on my upcoming studying stint in Bangkok, and my plans for the near future - and lo & behold, the opportunity for me to bake, came in.

He requested for my most popular Banana Cake and also for Vanilla Cupcakes, which I had recommended that it can be frosted with Vanilla Butter cream - which is of course, a perfect marriage between the moist cake & the cream.

Today's attention will be devoted only on this gorgeous, beautiful Vanilla baby.






To be honest, I'll choose chocolate cake over vanilla any time of the day, I'm not a huge fan of Vanilla, at all. This is probably because all my birthday cakes, when I was little, was mainly some sponge vanilla cake with whipped cream and decorated with swimming naked boys & girls (little figurines).

However, this takes the cake. I've never tasted moist, delicious plain old vanilla cake till I've baked this. Definitely one cake recipe which I will revisit time and time again.

Previously I had tried my hands at baking Humming Bird Bakery's Vanilla Cupcakes - you may read it again here .

Though the cupcakes was really well received and is also light and airy...I wanted to try and offer something better, hence decided to use a cake recipe instead of a cupcake recipe for this order. For that, I chose to use the cake recipe by Sweetapolita; one of my favorite cake blog.






I love how her detailed baking steps had me literally counting down the creaming, the beating timing using my timer...down to every 30 secs and minutes - felt like I'm in an episode of Running Men.

The steps may be tedious to some, but it definitely is worth the effort when your butter cream reaches such a wonderful spreading consistency and is yummy, or that the batter is at a smooth consistency. Again, I'm not a big fan of anything too creamy, but this is sweet, full of vanilla aroma and smooth! Not milky not too buttery.

So how did these gorgeous babies scored at the wedding, you may ask...






They scored me lots of Ooh & Aah from the group of people who had them *wink wink*, and not to mentioned, a heartfelt thanks from the newly weds themselves during their speech! - I was stoked, and am glad that they love my bakes...which is why they are now scattered with love. *ahhem!*
