Baking - Fours Secs Prestige & Fours Moelleux Prestige

Hello!

I just want to say...I miss my mummy already!

On the day we left for Korat, I returned straight home from school and we immediately head out. It was only upon our return back to Bangkok, after I've dropped her at the airport for her departure back to Singapore, and I returned back to my apartment - that I realised that she has helped tidy my apartment and cleaned the whole place.

I came back to squeaking feet because my parquet floors was that sparkling clean. My mum also helped iron all my uniforms so that I didn't have to rush through it on Sunday night. ='(

I'm super blessed to have two great mummies, my own mum and Ben's mum.

Sometime last year, I injured my hand and was unable to do house chores. I was supposed to do the laundry and all for Ben and myself, as our help was back at her hometown for her two weeks holiday. Then, my mummy J dropped by, did the laundry and clean the house, and even made one pot of delicious, yummy Lap Cheong Fun (Preserved sausage with mushroom hot pot rice) for us as dinner.

='( Whoa. Talking about these brings tears to my eyes! I always count my blessings and I thank fate for allowing things to fall into places. For me to be loved and to love.

Anyway!! *wipes tears away* Back to school people!

For the second week of school, we have the four sec prestige, which is the hard petit fours, and fours moelleux prestige, which is the soft petit fours. First up, we have the Sablés Lyophilisés, Arabica, Craquant Noisette and Sable Des Iles




The Sablés Lyophilisés is a petit fours consisting of baked crumble dough and dry fruits. The word lyophilisés refers to dry fruits. In this case, Chef used strawberries, peach, apricot and blackcurrant. The fillings is then mixed together with the crumbles and then filled into molds, before freezing it in the fridge till it comes apart together nicely.

It looks and taste like a good old energy bar.




Arabica consists of a small sable dough base with a piped dough and filled with coffee croquant consisting of almond, coffee bean, butter and nib sugar. The assembled petit fours are then freeze before baking.




Croquant Noisette consists of a crumbly soft dough base, topped with a ball made from coriander hazelnut praliné and coated with dark chocolate. It's a straight forward recipe, but I didn't like the coriander addition to the hazelnut praliné. It reminds me so much of black pepper ba kua (grilled pork slices) HAHA!




Then, we have the Sables Des Lles, which consists of coconut sablée dough (3 pcs, stacked together) and filled with fruit jelly in the middle. The difficult part, is to work the dough cold and fast, because the addition of coconut causes it to get soft real fast, and your squares will not be squares by the time you bake all of it.

Stupid dough. I've had to chill it several times in order to be able to work with it.Oh, and we get to use gold leaves now that we are in Superior! Woohoo!





Then, for the second class that week, we had the four moelleux prestige, the Le citronnier, Delicatesse, Douceur Chocolat, Amaretti macaroons and Financiers red wine.




First up, the Financiers red wine, which is a modern take on the classic financiers, here, Chef presented it topped with red wine jelly.




Then, we have the Le Citronnier, which is also another financier topped with lemon jelly. This petit fours reminded me of the Moelleux Chocolat I've done during my Basic time, and boy, how I miss that chocolate ganache soft cake!




Next up is the Delicatesse, which is a soft orange cake baked with a blackcurrant jelly in the middle, and dipped in orange punch for additional softness. I've got to say, that this is really nice! HAHA! Cause the whole texture, soft and a little chewy in the middle makes you can't stop at just one!




Amaretti macaroons is a type of macaroons from Italy, and is made plain, with no filings sandwiched in between, but it must have candied oranges in it. Unlike the French counterparts, this macaroons is best enjoyed with a cracked surface, and as dry as possible, so it has to be rest enough prior to baking to ensure that the mixture is dry enough before baking.





The Douceur Chocolat is a soft chocolate cake with a ganache filled center. A simple easy petit four.

Mew didn't come for practical, so I collaborated with Ying, another classmate to do these recipes. We did a great job together, I would say! And the difficulty we both faced, was piping the jellies. As I had to bake the blackcurrant jelly together with the sponge, I had to first pipe the hot jelly into the molds before it sets and boy, it was boiling hot!

Ying had to pipe the lemon jelly into her sponge after it was baked, and it was so hot she spilled the lemon jelly all over her desk the minute she cut a opening to the piping bag.

Overall, it was great, and I went back home, to a steamboat fest with my friends. =)

The last class for the week was on new style traveling cake, we had the Provence Traveling Cake, Caramel Mou Brownies and Week-end Cake Citron.




The Provence Traveling cake has layers of pistachio and vanilla almond sponge cakes, layered in between with fruit jelly and decorated with passion fruit puree, chocolate disc and fruits. More on that later.




The caramel mou brownies is a new take on classic brownies - it is round, served with two chocolate dices and is presented upright. The brownie is filled in the centre with soft salted caramel. I prefer my brownies slathered with lots of fudge and with a scoop of ice cream - the American style.

Last but not least, we have the Week-end cake citron, which is a lemon cake bottom filled and baked with a almond paste-lemon confit centre and piped St. Honoré coconut dacquoise. It's a butter cake with a chewy top.

Presenting to you, my Provence Traveling cake! 




Everyone was having trouble filling the holes with the passion fruit puree because it just kept seeping out. Finally, chef offered a solution, which is to fill the hole's surrounding with neutral glaze before filling the puree in. It worked!




Everything was good, besides the fact that the sponge layers has to be of the same thickness, which Mew and myself have neglected. During this practical, we also had the chance to use a new ingredient called "Mycryo", which is basically, a type of really fine cocoa butter powder, which helps to give the chocolate it's shine and stability, but without the need to carry out the tablage method.




So, school's out, and to pamper ourselves, Charmaine, Framm, Mew and myself head out to town for some retail therapy (bought books), movie (watched Smurfs 2, it was so damn funny!! I laughed the hardest!) and had late tea at Let Them Eat Cake.

I've always wanted to visit this cake shop for the longest time, and was finally had the chance to visit it the other day.




We ordered the Vanille Eclair, the Bellini St Honoré, Thai Tea Tart and the Coeur Noir, a chocolate mousse entremet with a chocolate biscuit base.




The Thai tea tart was my favourite, the creamy white chocolate gananche was delicious and flavourful, the tart shell was so thin, and the mousse was light. The vanilla eclair was also nice, the pastry cream was full of vanilla flavour, and creamy, just as how it should be. My only opinion is that it has too much icing sugar on the top.

The Bellini St Honoré has peach and a little liquor taste to it, if I'm not wrong, but it wasn't my favourite. I wanted to try their Thai Tea St. Honoré, but it wasn't available at that point of time. Lastly, the Coeur Noir is not worth my time, and calories. The raspberry coulis in the middle was weak, I didn't feel taste much of it, and the mousse was not light as it should be, it tasted really dense, so my opinion is that they should have a nice thicker sponge in the middle to balance out the thick mousse.

Ah, well. I shall go around trying out new cafes!

A visit from Chanel.

So, Chanel has been planning back in April that she would make a visit to Bangkok, just to spend a weekend visiting me.We talked about this impending trip and counting down to seeing each other, and missing the good old times we have back in Singapore, hanging out.

As with every visit (even back in Singapore) after her flights, she'll always bring something - a chocolate or two as gifts for me! This time was no different!




She got me the Milo Packets which I've blogged about, the veets showering hair removal cream (Oh yes, my hair removal episode is never ending; it's so hard to find these here!!), Tokyo Banana & ViVi Magazine, Cats Apron from Japan, a super duper cute hand moisturiser with a touchlight (See Piggy) and a gigantic huge sized Craftholic! *touched and cries tears of joy!*

Too bad I can't use my apron in class, otherwise it will be so adorable! On the other hand, I don't think I want to dirty the apron with heavy load of chocolate and batter. HAHA!

This time, she also brought along a little surprise from my dear old friend, Clementia aka Clemmy, who happens to hold the title of "National Archives to E3 peeps' photos"!




Thank you so much, my dear friend! This is now sitting prettily on my bedside table, and reminds me of all the laughter and joy my friends have shared with me. I'll definitely be back to bake more for you all!

On the day she touched down, we had a quick bite at the airport before proceeding home, she rested for the afternoon while I head to school for class! Bought dinner back home and we enjoyed the eclairs I baked the morning after as breakfast!




I think my eclairs became that much more appetising with Chanel posing with alongside it. HAHA!

We spent the next day (Saturday) shopping at Chatuchak Market, also known as JJ Market for cheap thrills and buys - bought a few T-shirts and some aromatherapy items to freshen up my room!




But the weather was so hot, we left by early evening and headed to Ashok BTS Station to walk at the Terminal 21 Shopping Mall. The toilets in the mall is created with different themes and we had fun taking pictures at every different floors with polaroids.

The next day, we went to Central Plaza at Phahon Yothin MRT Station to shop a little and have desserts at the After You Desserts Cafe, this time, we waited close to 1.5hours for a table (Crazy us!) and ordered the Cookie Choux, Banana Crumble and Mille Crepe.




Chanel with the lovely Cookie Choux, this time round though, I felt that the choux was smaller than the previous time I had with my Sis. But nonetheless, it was yummy with all the chocolate sauce and flavored ice cream. 




I get to taste the Banana Crumble this time! Chanel find that it's too sweet, while I think the banana slices was too little, it's only about 4-5 pieces in that crumble. Kinda miserable.




This was the highlight of that 1.5hours wait! Mille Crepe; whipped cream spread between layers of thin crepes, drizzled with maple sauce. It's light and fluffy and with every bite, you just want more. I had mille crepes at more than 4 different cafes, and this is the best.

The next day before Chanel flies back to Singapore, we made plans to visit the Jim Thompson House & Museum.




We went to National Stadium BTS Station after doing a transfer at the Siam Station and exited on the Exit 1, walked towards the left hand side and down a short distance before reaching the Soi Kasemsan 2. But before that, Chanel and myself walked too far down and had to used the GPS to track down the road, the address written was actually "6 Soi Kasemsan 2, Rama 1 Road, Bangkok" on the Lonely Planet, so we had walked in vain to find the "6 Soi".

In the end, it started pouring and we took a taxi down the lane to reach Jim Thompson House.

Mr Jim Thompson is an American who was born in Greenville, Delaware in 1906 and was sent to Asia during the World War II when he volunteered for the U.S. Army. He fell in love with Thailand and came back to live here permanently. During his life here, he helped revive the craft of hand weaving silk and contributed substantially to the Thai Silk's industrial growth, as well as responsible for introducing Thai silk to the world. 




The entire estate was combined using six teak buildings, and was at least two centuries old. Jim Thompson had followed the customs of the early builders in most respects in order to retain the authenticity of the best of Thai Traditional architecture. His house was full of broken buddha statues and restored old paintings of a buddha's life which was given to him by the monks. Jim Thompson had an impressive collection of arts which came from Burmese, Ayudhya, China, Italy and even Belgium.

But sadly, at the age of 61, he disappeared during a trip to Cameron Highlands in Malaysia. This house was then willed to his nephew, who had since then established the Jim Thompson Foundation and turned his beautiful Thai house into a nice museum.




We paid 50baht each for the compulsory 15-20 minutes English tour around the house, photos are not allowed on the upper deck of the house, which you will get to see the statues, the living room, dining room, previous pantry, his bedroom and guests rooms. The whole house is located near the river, where there's boat taxis passing by, and you can hear the sound. The place is relatively well taken care of, and you can't help but feel that it is a beautiful, lovely house and that there's a sense of calm throughout.

There's also a restaurant and a gift shop at the front of the house, having been converted from the house servant's area. Chanel got herself a nice little something from the shop, while I managed to resist getting another bag. It was big and gorgeous, but I certainly had no reason for it.

Through this visit, I realised I liked visiting museums and learning more the different things around here, or anywhere for that matter. There are people out there who deemed certain areas or things that are important, and worth preserving for. It is just up to us to visit and discover and find out for ourself whether we agree with their opinion or not.

With that, till the next museum I'll conquer! =)

Afternoon Tea - After You Desserts Cafe

It was a Public Holiday yesterday, and I took advantage of a nice sunny afternoon to seek comfort at Central Plaza, which is near to the Phahon Yothin MRT Station.

My sis & myself made plans the night before to visit and try out the desserts at After You Desserts Cafe.


There was a huge crowd; and it's not entirely because it's a PH, but because this is apparently very, very popular among the Thais now. The interior is pretty cosy, a little like Starbucks. There is a host giving out queue numbers, and when it's your number, you get directed to your seats and they will serve you the cutleries & maple syrup on a wooden tray.

You'll have to order & pay at the counter, and desserts get served within 20 minutes.

They are famous for their sweet thick toasts, like the ones we get at Xing Wang Cafe, and they also serves quite a number of other desserts like lava cake, pudding, custard, crumbles etc.

Sis and myself had a light lunch so that we can have more during afternoon tea. 


Strawberry frappe for my sis, Dark chocolate frappe for me. The strawberry frappe is smooth and sourish. I didn't like the Dark Chocolate frappe because it wasn't blended properly, there were lumps of ice in it, and the taste was just too diluted.

Sis ordered the Chocolate Choux, which is their latest promotion offering for sharing.


It was really good! Crispy, filled with chocolate & vanilla ice cream, drizzled with chocolate sauce & sprinkled with chocolate flakes, it's like an ice cream sandwich exploding into a chocolate mess with each bite.

The servers will do the finishing in front of you, so you can watch the sauce flow down.


This was a good old fashioned Lava cake, very beautifully done. I guess sis was happy with her choice! She liked the fact that the accompanying ice cream wasn't too milky or too sweet. It was just the right amount of sweetness in it, that it stands out on its own even after you've had a sweet chocolate cake.

I initially ordered the Banana Crumble, but they keyed in the wrong order, and I got the Strawberry Crumble instead.


I missed the Banana/ Apple Crumble back in Singapore, but this was good too. The strawberries was slightly sourish after being baked, but it compliments the sweet taste coming from the crumble and the ice cream - a perfect, warm combination, I would say!

Overall, it seemed like a nice place to enjoy a cup of coffee and share one or two desserts with friends. I would love to be back again soon to try the other desserts. It's worth the roughly 20 minutes wait.

I'm currently enjoying my breakfast consisting of Honey stars with milk, and blasting the soundtracks from The Great Gatsby on my Mac. School starts in the late afternoon today and I'm looking forward to it! I have an early morning Practical Class tomorrow and I can't wait to be baking again and sharing more with you guys on the Moelleux Chocolate we'll be baking!
